Black Teas |

Black tea originated from China and it is a fully oxidised type of tea, which results in its distinct and bold range of flavours and aromas. It is currently the most popular type of tea in the West, with varieties ranging from the classics such as Earl Grey and English Breakfast to the more special fusion blends and premium single estate teas. Although the production process varies from region to region, the traditional method involves plucking of the leaves and withering, followed by rolling which causes the leaves to bruise and triggers the oxidation process, and finally drying with heat to end the process. |
Pu Erh Teas |
Pu Erh teas are characterized by a distinct earthy, woody if not slightly ‘mouldy’ flavours and aromas. They are the only type of tea to undergo microbial fermentation and are considered to have special health benefits, which has been gaining them an increasing popularity in the West.
Pu Erh teas were first produced in the Yunnan province of China and for many centuries remained an exclusive Chinese speciality, mostly due to the region’s unique climate and soil type. A part from their distinct flavour, Pu Erh teas are believed to aid with digestion, high cholesterol and might even help shed a few extra pounds when combined with a healthy lifestyle and exercise. |

Green Teas |

Green tea dates back to Ancient China and it was the very first type of tea to be produced. Over the centuries it has spread to other countries, but the best varieties of green tea traditionally come from China and Japan. It is one of the two unoxidised tea types, renowned for its numerous health benefits, including a high level of antioxidants. The leaves are carefully plucked and then dried using heat, either by steaming (Japan) or by pan-firing (China), with each process resulting in a different character of the teas. |
White Teas |
White tea is an oxidised type of tea, its name deriving from the tiny silver-white hairs that can be found on the delicate, unopened leaf buds. It is traditionally made using just that little bud, that has been carefully plucked and dried out. The infusions are very light, usually ranging in very pale yellows and greens hues, with subtle and delicate flavours. White tea is very rich in antioxidants and a cup of tea contains the least of caffeine out of all the tea types. |

Oolong teas, sometimes also known as blue teas, are partially oxidised teas, with the most known varieties originating from Taiwan and China. The name ‘oolong’ derives from the Chinese term for ‘black dragon teas’. These teas are greatly appreciated by tea connoisseurs, due to their complex character and often distinct fruity, nutty and even floral flavours and aromas. Oolongs are somewhere between green and black teas and as such they often exhibit the delightful freshness of green teas and the enticing maturity of fully oxidised teas. |
